Bread uttapam

Uttapam  or  ooththappam  or  Uthappa  is a  dosa -like dish made by cooking ingredients in a batter. Unlike a dosa, which is crisp and  crepe -like, uttapam is a thick  pancake , with  toppings  c ooked right into the batter. Uttapam is sometimes characterized as an Indian  pizza .                            The recipe here is of bread Uttapam, got from one of my Facebook friend.I found its simple and tasty ,therefore added to my page. Onions are full of flavor, affordable, and nutritious! But Slicing an onion irritates eyes a lot .Isn't it ? Few of us may start crying literally just by the thought of chopping onions. Do you know why does tear comes while slicing an onion? T he tearing agent is your body’s chemical defense. When you slice an onion, it ruptures onion cells, a pungent juice sprays up into your eyes releasing a chemical irritant (amino acid sulphoxides). These re-form to make a gas and come in contact with your eyes-glands, it stings and the eye responds by producing tears to cleanse itself. Well! … the truth is that there is no practical way to completely eliminate eye irritation, but there are  a few things you can do to make it better. Idli Dosa Milagai Podi

                            Idli Dosa Milagai Podi   is a Spicy Chutney Powder mixed with oil and eaten with Idli and Dosa in  number of homes of South India. At home, my mom serves with warm rice along ghee too. I ngredients: Channa dhal( Kondaikkadalai ) - 1 cup Orid dhal(skinned & whole) - 1 cup Raw rice - 1/2 cup Red chilli - 8-10 Black Peppercorns ( Milagu/ Kali Mirch) - 4-5 Asafoetida( Perungayam/Hing ) - 1/4 tsp Salt - to taste Method: 1)Roast Channa dhal,Orid dhal and raw rice separately without oil until golden brown separately.  2)Roast red chilli and black peppercorn  also  separately .  3)Allow  both roasted ones to cool down by keeping it aside . 4)Grind roasted channa, orid, rice, red chilies and peppercorn to semi-coarse to fine powder. 5)Add in asafoetida and salt and grind for few more secs so  ...

Egg-less Omelette

Recipe # 2  for NO-Egg Omelette :)           Ingredients Gram flour(Besan) - 1 cup Wheat flour - 1/2 cup Sour Curd( Khatta Dahi ) - 1 tbsp Grated Carrot - 1/4 cup Red Chili powder - 1/2 tsp Salt to taste. Method Mix all the ingredients in a bowl. Add water as required and make sure the mixture has  consistency similar to regular egg-omelette .  Heat a non-stick pan, brush some oil and spread the mixture. Cook on both the sides.  Serve this soft,spongy omelette with any chutney or dips or with Idly Milagaipodi.                                                     Happy Cooking!

                                Recipe # 1  for NO-Egg Omelette ! Egg-less Omelette\ Kadalai mavu dosai is a  simple and tasty alternative for vegetarians to serve as a breakfast dish.This recipe is especially for the p eople who say no to eggs but now they can also eat an omelette  ;).  Ingredients: Chickpeas (Besan) Flour – 3 cups Water – 2 1/2 to 3 cups Onion – 1/2 cup, finely chopped Tomatoes – 1/2 cup, finely chopped Coriander Leaves – handful, finely chopped Ginger – 1/4 inch piece, peeled, minced Turmeric Powder – a pinch Green Chili – 1, minced Oil – 2 tblsp Salt as per taste Method :  Mix the flour and a pinch of salt in a bowl.  Gently add water and whisk well to a smooth batter without any lumps.  Add the chopped onions, tomatoes, coriander leaves, turmeric powder, green chili and ginger.  Mix well. ...
