Kothu Veg Roti/Kothu Veg Chapatti

Kothu Chapatti is a dish similar to the popular Kothu pa-rata that one will find in any South Indian hotels and also in street side stalls. It's a specialty of the Tamil Nadu cuisine and is most famous across cities such as Madurai, Tuticorin. Here the pa-ratas are minced and continually pounded along with meat, eggs, spices and vegetables over a wide tawa until all the ingredients combine well with one another which will bring together a nice flavor and one awesome tasting dish. 
My recipe here is a simplified version of the same,but I used chapattis instead of pa-ratas.

Kothu Roti/Kothu Chapatti Vegetarian style


       Ingredients:
  • ·   Chapattis- 4 cut into squares
  • ·   Onion-1 Large chopped finely
  • ·   Tomatoes -1 medium sized chopped finely
  • ·   Tomato sauce- 1 tsp
  • ·   Capsicum - 1 small chopped into squares or lengthwise
  • ·   Green chilies- 1 silted
  • ·    Ginger- 1 " piece- crushed ,Garlic- 3 flakes – crushed  or Ginger-garlic paste 1 tsp
  • ·    Fennel seeds (Saunf)- 1/4 tsp
  • ·    Mustard seeds- 1/4 tsp
  • ·    Curry leaves- a Small Spring
  • ·    Turmeric powder- 1/4 tsp
  • ·    Red Chilly powder- 1/2 tsp or as per your taste
  • ·    Oil- 2 tbsp
  • ·    Salt to taste
  • ·    Coriander leaves- a few chopped finely to garnish.
            Method:


  • ·      Heat oil in a pan and add the Mustard and Saunf seeds.
  • ·  When they sizzle add the chopped onions , curry leaves and green chilly.
  • ·  Saute for some time and when the onions turn transparent add the crushed ginger,garlic or paste and chopped tomatoes.
  • ·  Fry till the tomatoes are mushy and then add the chopped capsicum pieces and tomato sauce.
  • ·  Then add Turmeric powder,Chilly powder and salt.
  • ·  Keep in a low flame for a few minutes or till the oil get separates
  • ·  Finally add the chopped Chapatti pieces.
  • ·  Mix well and garnish with chopped coriander leaves.
  • · Serve hot just like that or with Raitha.
                 Suggestions:One can do the same with leftover poori(s) or paratas. Customize the amount of red chilly powder according to the tolerance level. To add more taste add crumbled paneer  and enjoy :)
        If you are a non-vegetarian add scrambled eggs .
